The existing saves for Palworld will work with version 1.0

Version 1.0 of Palworld will come out for PS5, XBOX One, XBOX Series X|S, and PC this July 10. The update will introduce several new features, including additional Pals and locations to explore.

In a post on X, Pocketpair addressed a community question regarding the use of saves made during Early Access. The studio confirmed that players will be able to continue using their existing saves in version 1.0.

That being said, the devs encourages players to start a new game with a new character " due to the large number of changes to the game, including overhauls to mechanics and new content." The choice is up to each player.
